Common Question — There are some solid crystals in my liquid honey…. it looks like it is creamed. Is this normal?
All real raw honey will naturally crystalize over time and does not mean that is in ruined. The crystallization process is natural and spontaneous. It does not affect the honey other than color and texture. Actually the crystallization of honey actually preserves the flavor (tastes richer) and quality characteristics of your honey. Crystallized the honey takes longer to melt on the tongue which allows you to activate all of your taste buds which then can pick up on the nuances of the flavours. The only draw back is that is is more difficult to spread on toast or pour.
What is meant by raw honey and why is it considered a health food?
Raw honey contains approximately 22 amino acids, 31 different minerals, wide range of vitamins and enzymes and nearly 30 types of bioactive plant compounds that act as antioxidants. This is why people prefer raw, compared to the commercial varieties that have far less health benefits due to processing methods and sometimes the addition of corn syrup.
