Maple syrup is made from the sap maple trees. The maple syrup production process gets its start from one of nature’s true phenomena. In springtime, when the nights are below freezing, water from the soil is absorbed into the maple tree. During the day, warmer temperatures of about 40 degrees Fahrenheit create pressure that pushes the water back down to the bottom of the tree, making it easy to collect the precious maple sap. The sap is gathered over 4-6 weeks starting end of February and early March in Prince Edward County.

The differences in how maple syrup will look and taste different depends upon when the sap was collected. Syrup that produced at the beginning of the season is light (Golden -Amber grades) and syrup which is collected at the season has a strong maple taste and is darker in color (Dark – Very Dark grades). Currently the Maple Syrup available from this site will be in plastic containers. In the retail store we have glass jars and some tins available.
